Why does my fryer smell burnt even before I start cooking?

Modified on Mon, 24 Aug at 12:56 PM

A burnt or stale smell before cooking usually points to old oil, residue in the bowl, or food particles left from a previous use. The manuals advise changing the oil when its colour or smell changes and cleaning the removable parts only after the fryer has cooled fully.

  1. Unplug the fryer and let it cool completely. Expected result: the smell should not become stronger as the unit cools. If you notice smoke or scorching, stop using it.
  2. Check whether the oil looks dark, cloudy or has an unpleasant odour. Expected result: oil in good condition should look and smell neutral. If it smells stale, replace it according to the fryer instructions.
  3. Empty the bowl only when the fryer is fully cool, then clean any residue from the pan, basket and lid or filter area as applicable. Expected result: the next use should smell cleaner. If the smell remains after cleaning, stop using the fryer.
  4. Inspect the area around the heating element and basket supports for cooked-on crumbs. Expected result: a clean fryer should have fewer odours. If you see charred build-up that you cannot remove safely, contact the retailer or store where it was purchased.

If the smell is sharp, electrical or accompanied by smoke, stop using the fryer immediately and do not plug it back in until it has been checked.
